Oatmeal Banana Muffins! These are one of my favorite snacks and they are super easy to make.
1 cup milk (I used skim but pretty much any other kind will work)
1 tbs baking powder
2 tbs honey
1 tsp vanilla extract
3 cups old fashioned oats
Preheat oven to 375 degrees. Blend bananas in a blender (or you could just mash them, but I’ve found blending them makes the texture a lot smoother), then mix ALL the ingredients together in a large bowl.
Spoon the batter into a muffin tin, then bake for 20-30 minutes. The edges will be a bit brown and they should be firm to the touch.
Let cool then enjoy! You could also add chocolate chips, blueberries, strawberries, etc. to the batter, but I like them plain.
